Ingredients

  • 4 quarts water
  • 2 Tbsp salt, plus more if needed
  • 1/4 cup olive oil
  • 6 garlic cloves, finely minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese, plus extra for topping
  • Salt and freshly cracked black pepper to taste
  • 1 loaf Italian bread (about 24 inches long)
  • 1 cup (2 sticks) unsalted butter, softened
  • 8 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp garlic powder (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Boil the water: Start by bringing a large pot filled with 4 quarts of water to a boil. Stir in 2 tablespoons of salt.
  2. Cook the spaghetti: Once the water is boiling, add the spaghetti and cook until al dente.
  3. Drain the pasta: After cooking, drain in a colander and reserve 1 cup of pasta water.
  4. Make the garlic oil mixture: In a skillet, warm olive oil and sauté 6 minced garlic cloves and crushed red pepper flakes for 1–2 minutes.
  5. Combine spaghetti with garlic oil: Toss the drained spaghetti into the skillet, add reserved pasta water, parsley, and Parmesan cheese.
  6. Prepare the garlic butter spread: Mix softened butter with 8 minced garlic cloves, parsley, Parmesan, garlic powder, and seasonings.
  7. Prepare the garlic bread: Slice the Italian bread lengthwise and spread the garlic butter mixture on both sides.
  8. Bake the bread: Preheat oven to 375°F (190°C) and bake the bread halves for 10-12 minutes until golden.
  9. Serve your dish: Once the bread is ready, fill it with garlic-coated spaghetti and garnish with additional Parmesan and parsley.

Notes

For an extra crispy finish, broil the bread for 1-2 minutes, watching closely to prevent burning. Store leftovers in an airtight container for up to three days.
