Description

A creamy, cheesy butternut squash casserole with golden breadcrumbs  the perfect cozy side dish for holidays or family dinners.


Ingredients

1 large butternut squash (about 2 1/2 lbs / 1.1 kg), peeled and cubed

2 tbsp olive oil

Salt and black pepper, to taste

2 tbsp butter

1 small onion, finely chopped

2 cloves garlic, minced

1 cup (240 ml) milk

1/2 cup (120 ml) heavy cream

1 1/2 cups (150 g) shredded cheddar cheese

1/2 cup (50 g) grated Parmesan cheese

1/2 tsp paprika

1/4 tsp nutmeg (optional)

1 cup (60 g) panko breadcrumbs

1 tbsp butter, melted (for topping)

Fresh thyme or parsley, for garnish


Instructions

1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper. Roast for 25–30 minutes until tender.

2. In a skillet, melt butter over medium heat. Add onion and cook until translucent. Stir in garlic for 30 seconds.

3. Add milk and cream, then stir in cheddar, Parmesan, paprika, and nutmeg until smooth.

4. Mash roasted squash and fold into the cheese sauce. Transfer to a greased 9×9-inch baking dish.

5. Mix breadcrumbs with melted butter and sprinkle on top.

6. Bake for 15–20 minutes until golden and bubbly. Garnish with herbs and serve warm.

Notes

Add cooked bacon or sausage for a protein boost.

Use Gruyère or Fontina for richer flavor.
