Description

No-bake strawberry cheesecake protein balls made with oats, almond butter, protein powder, and freeze-dried strawberries  a creamy, fruity, and energizing snack for any time of day.

Ingredients

Scale

1 cup rolled oats

1/2 cup vanilla protein powder

1/4 cup almond flour

1/4 cup almond butter (or cashew butter)

3 tbsp honey or maple syrup

2 tbsp cream cheese, softened

1/4 cup freeze-dried strawberries, crushed

1/2 tsp vanilla extract

Pinch of salt

12 tbsp milk, as needed

Instructions

1. In a large bowl, mix together oats, protein powder, almond flour, and salt.

2. Add almond butter, honey, cream cheese, and vanilla extract.

3. Stir until a thick dough forms — add milk 1 tablespoon at a time if too dry.

4. Fold in crushed freeze-dried strawberries.

5. Roll the mixture into 1-inch balls using your hands.

6. Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

7. Store in an airtight container in the fridge for up to a week.

Notes

Use strawberry protein powder for extra flavor.

Drizzle with melted white chocolate for a dessert-style version.

These make a great post-workout or after-school snack.
