- 4 large eggs
- 2 cups grated carrots

Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- Combine the wet ingredients in another bowl: granulated sugar, brown sugar, and vegetable oil. Mix well.
- Add the eggs one at a time, beating well after each addition.
- Stir in the grated carrots and crushed pineapple until well combined.
- Fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack and cool completely.
- Top with cream cheese frosting before serving.
