Ingredients

  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Combine the wet ingredients in another bowl: granulated sugar, brown sugar, and vegetable oil. Mix well.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the grated carrots and crushed pineapple until well combined.
  6. Fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for 10-15 minutes, then transfer to a wire rack and cool completely.
  10. Top with cream cheese frosting before serving.
