Description
These Caprese Pesto Pinwheels combine the classic Italian flavors of basil, mozzarella, and tomato into flaky, buttery pastry bites. They’re easy to make, bake beautifully golden, and are perfect for entertaining or snacking.
Ingredients
1 sheet puff pastry, thawed
3 tbsp basil pesto
1 cup shredded mozzarella cheese (or thin mozzarella slices)
1/2 cup sun-dried tomatoes or finely diced cherry tomatoes
1/4 tsp salt
1/4 tsp black pepper
1 egg (beaten, for egg wash)
Balsamic glaze (optional, for drizzling)
Fresh basil leaves (optional, for garnish)
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Unfold the puff pastry sheet on a lightly floured surface.
3. Spread an even layer of pesto across the pastry, leaving a small border around the edges.
4. Sprinkle mozzarella and diced tomatoes evenly over the pesto.
5. Season lightly with salt and pepper.
6. Roll the pastry tightly into a log and slice into 1/2-inch pinwheels.
7. Place pinwheels on the prepared baking sheet and brush tops with beaten egg.
8. Bake for 15–18 minutes, or until golden and puffed.
9. Drizzle with balsamic glaze and garnish with fresh basil before serving, if desired.
Notes
Use store-bought or homemade pesto — both work great.
You can substitute puff pastry with crescent roll dough for a softer texture.
Best served warm or at room temperature.
Add a sprinkle of Parmesan for an extra cheesy kick.
