Description
A light and zesty appetizer featuring spicy Cajun shrimp served atop cool cucumber slices with creamy avocado a refreshing, low-carb bite full of flavor.
Ingredients
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp garlic powder
1/4 tsp smoked paprika
1 large avocado, diced
1 tbsp lime juice
1 tbsp chopped cilantro
1 English cucumber, sliced into rounds
Salt and pepper to taste
Instructions
1. In a medium bowl, toss shrimp with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
2. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
3. In a small bowl, mash the avocado with lime juice, cilantro, and a pinch of salt.
4. Arrange cucumber slices on a serving platter.
5. Top each cucumber slice with a small spoonful of avocado mixture.
6. Place one cooked shrimp on top of each avocado-topped cucumber slice.
7. Garnish with extra cilantro or a sprinkle of Cajun seasoning if desired.
8. Serve immediately as a light appetizer or snack.
Notes
For extra heat, add a dash of hot sauce to the shrimp marinade.
These are best served fresh but can be prepped ahead with cooked shrimp and sliced cucumber stored separately.
