Ingredients
4 ripe Roma tomatoes, diced
1/4 cup fresh basil leaves, finely chopped
2 garlic cloves, minced
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/4 tsp salt
1/4 tsp black pepper
1/4 cup shredded Parmesan cheese (optional)
Balsamic glaze, for drizzling
Toasted baguette slices or crackers, for serving
Instructions
1. In a medium bowl, combine diced tomatoes, basil, and minced garlic.
2. Drizzle in olive oil and balsamic vinegar, then season with salt and pepper.
3. Stir gently to combine all ingredients.
4. Cover and let sit for 10–15 minutes to allow flavors to meld.
5. Just before serving, sprinkle with Parmesan cheese if desired.
6. Transfer to a serving bowl and drizzle with balsamic glaze.
7. Serve with toasted baguette slices or crackers.
Notes
Use cherry tomatoes for a sweeter flavor.
Add diced mozzarella for a Caprese-style twist.
