Ingredients

2 tbsp butter

1 small onion, finely chopped

2 garlic cloves, minced

4 cups fresh broccoli florets, chopped

3 cups chicken broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1/2 tsp paprika

Salt and pepper to taste

1/4 tsp xanthan gum (optional, for thickening)

Extra cheddar and steamed broccoli florets for garnish


Instructions

1. In a large pot, melt butter over medium heat.

2. Add chopped onion and garlic, sauté until softened and fragrant.

3. Add chopped broccoli and chicken broth; bring to a boil.

4. Reduce heat and simmer for 10–15 minutes until broccoli is tender.

5. Use an immersion blender to blend the soup until smooth (or leave some texture if preferred).

6. Stir in heavy cream, cheddar cheese, paprika, salt, and pepper.

7. Simmer on low until cheese is fully melted and soup is creamy.

8. If desired, sprinkle in xanthan gum and whisk until thickened.

9. Serve hot, topped with extra cheddar and broccoli florets.

Notes

For added protein, stir in shredded chicken or cooked bacon.

You can use frozen broccoli — just thaw and drain before cooking.

Store leftovers in the fridge up to 4 days; reheat gently to avoid curdling.
