Description

A delightful dish that combines the sweet burst of blueberries with creamy feta cheese and a spicy drizzle of hot honey, perfect for lunch, dinner, or as an appetizer.


Ingredients

  • 2 flatbreads or naan
  • 3/4 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • Fresh thyme or basil (optional)
  • 1/4 cup honey
  • 1/21 tsp chili flakes (to taste)
  • 1/2 tsp apple cider vinegar or lemon juice

Instructions

  1. Make Hot Honey: Warm the honey in a small saucepan over low heat, stir in chili flakes, and add apple cider vinegar or lemon juice. Remove from heat and let steep.
  2. Assemble Flatbread: Preheat oven to 200°C (400°F). Brush flatbreads with olive oil. Scatter blueberries and sprinkle feta on top. Add fresh herbs if desired.
  3. Bake: Place flatbreads in the oven and bake for 10 to 12 minutes until crisp and the feta is golden brown.
  4. Finish & Serve: Drizzle with hot honey before serving. Slice and enjoy warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven before serving.
