Description

A protein-packed, lightly sweetened breakfast bake made with cottage cheese, oats, and juicy blueberries  a healthy, easy-to-make morning meal that tastes like dessert but fuels your day.


Ingredients

Scale

1 cup cottage cheese

2 large eggs

1/4 cup milk (any kind)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 1/2 cups rolled oats

1 tsp baking powder

1/2 tsp cinnamon

Pinch of salt

1 cup fresh or frozen blueberries

Butter or nonstick spray for greasing the dish


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.

2. In a large mixing bowl, whisk together cottage cheese, eggs, milk, honey, and vanilla until smooth.

3. Add oats, baking powder, cinnamon, and salt; stir until combined.

4. Gently fold in the blueberries.

5. Pour the mixture into the prepared baking dish and spread evenly.

6. Bake for 30–35 minutes, or until the top is golden and the center is set.

7. Cool slightly before slicing, and serve warm or at room temperature.

Notes

Add a scoop of protein powder for an extra boost.

Top with a drizzle of almond butter or Greek yogurt when serving.
