- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh blueberries
- 1/4 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by combining graham cracker crumbs and melted butter, and pressing it into the bottom of a springform pan.
- Mix the cream cheese with an electric mixer until smooth and creamy.
- Add the sugar and vanilla extract, mixing until well combined.
- Incorporate the eggs one at a time, mixing thoroughly after each addition.
- Add the fresh blueberries and sour cream, folding gently to keep the blueberries intact.
- Combine the cheesecake mixture with the prepared crust in the springform pan.
- Bake for about 50-60 minutes, until the edges are set and the center is slightly jiggly.
- Cool in the oven for an hour, then refrigerate for at least 4 hours, preferably overnight.
- Serve after carefully removing from the springform pan, garnished with additional blueberries if desired.
Notes
Use room temperature ingredients for a smoother batter. Consider a water bath for extra creaminess.
