Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan lightly to prevent sticking.
  3. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, and salt.
  4. Prepare the wet mixture by creaming together butter, egg, and vanilla until fluffy.
  5. Combine the dry mixture with the wet mixture, alternating with milk, until just mixed.
  6. Fold in the fresh raspberries with a spatula.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for 10-15 minutes, then transfer to a wire rack.
  10. Serve with butter, cream cheese, or ice cream.
