Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Mix the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Combine the wet ingredients: vegetable oil, eggs, grated carrots, crushed pineapple, and nuts (if using).
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Cool the cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat together cream cheese and butter for the frosting, then gradually add powdered sugar and vanilla until fluffy.
- Assemble the cake by frosting between the layers and covering the top and sides.
