  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Combine the wet ingredients: vegetable oil, eggs, grated carrots, crushed pineapple, and nuts (if using).
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
