Ingredients
2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
2 large eggs, separated
1 3/4 cups milk
1/2 cup unsalted butter, melted
1 tsp vanilla extract

Instructions
1. Preheat your waffle iron according to the manufacturer’s instructions.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients and stir just until combined — a few lumps are fine.
5. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter.
