Ingredients

3 ripe bananas, mashed

2 cups rolled oats

1/4 cup honey or maple syrup

1/4 cup melted coconut oil (or butter)

1 tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp baking powder

Pinch of salt

1/3 cup mini chocolate chips or chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.

2. In a large bowl, mash the bananas until smooth.

3. Add honey, coconut oil, and vanilla; mix until combined.

4. Stir in oats, cinnamon, baking powder, and salt.

5. Fold in chocolate chips or nuts if using.

6. Spread the mixture evenly in the prepared pan.

7. Bake for 25–30 minutes, or until set and lightly golden around the edges.

8. Let cool completely before slicing into bars.

Notes

Store in an airtight container for up to 5 days or refrigerate for up to a week.

Freeze individually wrapped bars for up to 2 months.

For a nut-free version, skip the nuts and use sunflower seed butter instead of coconut oil.
