Ingredients
1 cup cottage cheese (small curd)
2 ripe bananas, mashed
2 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 1/2 cups rolled oats (or oat flour)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
Pinch of salt
Optional: 1/4 cup chocolate chips or chopped walnuts
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a blender or food processor, blend cottage cheese, bananas, eggs, honey, and vanilla until smooth.
3. Add oats, baking powder, baking soda, cinnamon, and salt. Blend or stir until combined.
4. Fold in chocolate chips or nuts if using.
5. Divide batter evenly into muffin cups (about 3/4 full each).
6. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
7. Let cool slightly before serving. Store leftovers refrigerated for up to 5 days.

These muffins freeze well — thaw overnight or microwave for 20 seconds.
Substitute Greek yogurt for half the cottage cheese for a tangy twist.
