Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
3 ripe bananas, mashed
⅓ cup Greek yogurt (plain or vanilla)
¼ cup melted butter
¼ cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
¼ cup brown sugar
½ cup chopped walnuts or chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
3. In a large bowl, mash the ripe bananas until smooth.
4. Add Greek yogurt, melted butter, honey, eggs, vanilla extract, and brown sugar to the bananas. Mix until combined.
5. Gradually fold in the dry ingredients until just incorporated—do not overmix.
6. Stir in walnuts or chocolate chips if using.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra sweetness, use vanilla Greek yogurt instead of plain.
Freeze leftover slices individually for up to 2 months.
Add a sprinkle of oats or chopped nuts on top before baking for a rustic finish.
This banana bread tastes even better the next day after flavors deepen.
