- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup butter, cold and cubed
- 1/2 cup heavy cream
- 1 egg
- 1 teaspoon vanilla extract
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon cinnamon (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare your baking sheet by lining it with parchment paper.
- Mix the dry ingredients in a large mixing bowl: flour, sugar, baking powder, salt, and cinnamon.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Combine the wet ingredients: mash the bananas, then add heavy cream, egg, and vanilla extract.
- Pour the banana mixture into the dry ingredients and stir gently until just combined.
- Turn the dough onto a floured surface, knead gently, and shape into a circle about 1 inch thick.
- Cut the dough into wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown.
- Prepare the glaze by beating cream cheese, powdered sugar, and cinnamon; add milk for desired consistency.
- Glaze the warm scones once they have cooled slightly.
- Enjoy warm, best served fresh!
Notes
For best results, use very ripe bananas and keep your butter cold for a flaky texture.
