Description

Ingredients

  • 4 Eggs
  • 2 tbsp Olive oil
  • 1 cup Tomatoes (cherry or diced)
  • 1/2 cup Olives (optional)
  • 1 cup Spinach (optional)
  • Salt to taste
  • Pepper to taste
  • Herbs (like oregano or basil) to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a suitable baking dish and place a block of feta cheese in the center.
  3. Add fresh tomatoes around the feta, and add olives if desired.
  4. Drizzle olive oil over the vegetables and feta cheese.
  5. Season with salt, pepper, and herbs.
  6. Crack the eggs into small wells made in the mixture.
  7. Bake for about 20 minutes until the eggs are cooked to your liking.
  8. Mix gently before serving to combine the feta with eggs and veggies.
  9. Enjoy warm, preferably with fresh bread.
