Ingredients

  • 4 fillets Cod (thick, white cod fillets)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Prepare the Ingredients: Gather all your ingredients and bring cod fillets to room temperature. Chop the onion, mince the garlic, and grate the ginger.
  2. Sauté the Aromatics: In a large skillet, heat olive oil over medium heat, add onion, and sauté for 3-4 minutes until translucent. Add garlic and ginger, cooking for another minute.
  3. Add the Coconut Milk and Lemon: Pour in coconut milk, stir in lemon juice and zest, season with salt and pepper, and simmer for about 5-7 minutes until slightly thickened.
  4. Bake the Cod: Preheat oven to 400°F (200°C). Place cod in a baking dish, pour the sauce over it, and cover with foil. Bake for 15-20 minutes until fish flakes easily with a fork.
  5. Serve: Remove from oven and serve immediately with sauce over the top, pairing well with rice or steamed vegetables.
