Description

Rich and moist chocolate cupcakes infused with Baileys Irish Cream and topped with a smooth, creamy Baileys buttercream frosting. These indulgent treats are perfect for celebrations, holidays, or any dessert table.


Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup Baileys Irish Cream

1/4 cup whole milk

1/2 cup unsalted butter, softened (for frosting)

2 1/2 cups powdered sugar

23 tbsp Baileys Irish Cream (for frosting)

1/4 cup heavy cream (if needed for consistency)

Chocolate shavings for garnish


Instructions

1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In a separate bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla extract.

5. Combine Baileys and milk in a small bowl.

6. Alternate adding dry ingredients and Baileys mixture to the batter, mixing until just combined.

7. Fill cupcake liners 2/3 full and bake for 18–20 minutes or until a toothpick inserted comes out clean.

8. Cool completely before frosting.

9. For the frosting, beat butter until creamy.

10. Gradually add powdered sugar, then mix in Baileys until smooth and fluffy. Add heavy cream if needed.

11. Pipe frosting onto cooled cupcakes and garnish with chocolate shavings.

Notes

Do not overmix the batter to keep cupcakes tender.

Adjust Baileys in frosting for stronger or lighter flavor.

Store in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.

For extra indulgence, fill cupcakes with chocolate ganache before frosting.
