Description

Ingredients

2 slices whole-grain or sourdough bread

1 ripe avocado

2 large eggs

1 tsp white vinegar (optional, for poaching)

Salt and pepper to taste

Red pepper flakes (optional)

Fresh lemon juice (optional)

Olive oil for drizzling


Instructions

1. Bring a small pot of water to a gentle simmer and add white vinegar if using.

2. Crack each egg into a small bowl, then gently slide it into the simmering water.

3. Poach for about 3–4 minutes, or until whites are set but yolks remain soft.

4. Meanwhile, toast the bread slices to your desired level of crispiness.

5. Scoop out the avocado into a bowl and mash with a fork; season with salt, pepper, and a squeeze of lemon juice if desired.

6. Spread the mashed avocado evenly over the toasted bread.

7. Remove the poached eggs with a slotted spoon, drain well, and place one on each toast.

8. Sprinkle with salt, pepper, and red pepper flakes.

9. Drizzle lightly with olive oil and serve immediately.

Notes

Top with microgreens, feta cheese, or everything bagel seasoning for extra flavor.

For perfectly shaped poached eggs, use a fine mesh strainer to remove loose egg whites before cooking.
