Ingredients
4 large hard-boiled eggs, chopped
1 ripe avocado
2 tbsp Greek yogurt or mayonnaise
1 tsp lemon juice
Salt and pepper to taste
1 tbsp chopped fresh chives or green onions
4 large flour tortillas
Optional: lettuce leaves or spinach for extra crunch
Instructions
1. In a medium bowl, mash the avocado until smooth.
2. Add Greek yogurt (or mayo), lemon juice, salt, and pepper; mix until well combined.
3. Stir in chopped eggs and chives until evenly coated.
4. Lay out tortillas and optionally add a layer of lettuce or spinach.
5. Spoon the avocado egg mixture evenly onto each tortilla.
6. Roll up tightly, slice in half, and serve immediately or wrap for later.
